Sunday Spatchcock is once of my favorite family rituals. Growing up with the weekly tradition of a ‘Sunday Cookout,’ the feeling of resetting, spending time with family & setting the tone for the week is one I am so grateful to carry on with Bo, Sophie & our black lab, Scotch (who always gets a taste). Every week we do it a little differently, but the rhythm is the same: gather seasonal vegetables and herbs, prepare the chicken, and enjoy a few moments together while the house fills up with the most savory familiar smell. Sometimes we devour the chicken on Sunday, and other times it gets carved and tossed into recipes throughout the week. Regardless, the bones and vegetables simmer overnight into a rich homemade broth, one of my most cherished ways to add flavor and nutritional density to our meals all week.

For several years, cooking has been my creative outlet – a place where there is no right or wrong. Only experiments. The sight, smell, taste and feel of a creation coming to life. A daily art project. A way to nourish my body.
Before ever learning to cook, I fell in love with nutrition. As a Functional Medicine Nurse Practitioner, I devoted hours to researching the nutritional effects of a meal before ever figuring out how to put it onto a plate. When the science finally collided with flavor, to me, it was magic.
These days, the hours are shorter and the moments are sweeter. The spare time I used to spend indulging in lengthy recipes I now share with a little sous-chef. This always means more laughs, more spills, more dancing, and a daily need to simplify. And the magic, much deeper, is in being in the kitchen together.

I have been inspired over and over to cook and to create – both from a place of art and of wellbeing. For me, every facet of health starts in this space with people I love.
